Seeping: Water seeps out through these pores to the outer surface of the pot.
Evaporation: This water evaporates from the surface.
Cooling: To evaporate, the water requires heat (latent heat of vaporization). It absorbs this heat from the earthen pot and the water inside. As the heat is removed, the remaining water cools down.
